Tasting Notes:
Great evolution in the 10 years from the vintage. Incredibly complex on the nose, with a wide opening on ripe plums, tart cherry, cassis, violet, black pepper, clove and licorice. Lava stone and charcoal on the finishing notes. Rich in depth and length. Stil holding high acidity, full body and sustained warmth on the closing.
Suggested Pairing:
Char-grilled red meat (or oven roasted game), medium rare, with sea salt and crushed black pepper corns. Roasted rosemary potato wedges on the side.
